What is Khustawi Dates?
The Khustawi (also spelled Kustawi, Khistawi, or Khastawi) is one of Iraq's most important and beloved commercial date varieties, known for its soft texture and elegant, balanced sweetness.
Appearance & Taste
Small to medium-sized, averaging 2 to 5 centimeters in length, with an oval to oblong shape and a broad center with blunt, curved ends. The skin ranges from smooth and glossy to creased and folded, showcasing a translucent, golden-brown hue that is thin and delicate. The flesh is thick, dense, and sticky with a soft, chewy, and fibreless consistency. The flavor is richly sweet and syrup-like with a creamy texture reminiscent of caramel.

It is known for its long storage capability and is one of the soft varieties that can be stored for extended periods in various packaging forms.
Nutrition
An excellent source of fiber to regulate digestion and potassium to balance fluids. Also provides magnesium (blood pressure), copper (nervous system), manganese (connective tissue), as well as vitamin B6, iron, and vitamin C.
Health & Tradition
Its high fiber content promotes digestive health. In Iraq, it is traditionally consumed during Ramadan and is a key ingredient in Maamoul, the date-filled cookies served throughout Eid al-Fitr. In western Iraq, it is famously used in a traditional Ramadan dish where Khustawi dates are mixed with melted ghee (clarified butter).
Culinary Use
Primarily consumed fresh, out of hand as a snack. Also incorporated into syrups, desserts, and savory preparations. Can be sliced into salads, added to rice and roasted meats, or stuffed with nuts (especially almonds or pistachios) sometimes scented with rose water. Excellent for cakes, muffins, ice cream, and cookies as a sticky filling.
